We at 21st Century Herbs believe that many of these disorders are directly or indirectly caused by the body's inability to cope with the multitude of colourings, sweeteners, preservatives and other processes used in the food industry. Simple, traditional foods such as bread, milk and meat are no longer prepared in the traditional way. For example, wheat has been bodified to contain more gluten and therefore has become more glue-like. This means simply that wheat and other cereal grains stick to the intestinal walls, in effect reducing our ability to absorb this energy food. Low energy is common in the 21st century even amongst our children and reduces our tolerance to illness and disease.

Although dairy product has been consumed for thousands of years it has only recently become associated with eczema and asthma. Modern milk is often treated to preserve for several months thereby destroying probiotics in dairy which have recently been shown as necessary for correct digestion of dairy products. The food industry also removes the fat from milk, a practise adopted since the second world war. Since the invention of 'low fat' products there has been a marked increase in obesity and sensitivity to dairy products.
